Château Dassault has been oenologically advised by Michel Rolland since 1973, and viticulturally advised by Louis Mitjavile since 2000. Laurence Brun has been managing this vineyard since 1995, and is actively involved in maintaining this property among the appellation’s finest Grands Crus Classés.
Located on the northern glacis of Saint-Émilion, the 28-hectare vineyard extends over clay and sandy soils. The grape varieties are 75% Merlot, 20% Cabernet Franc and 57% Cabernet Sauvignon. The grapes are harvested by hand, followed by a high-performance optical sorting process to ensure that only the very best are kept. Vinification takes place in small-capacity concrete and stainless-steel vats, allowing each parcel to be vinified separately, in order to respect its personality. These plot-by-plot vinifications have recently been coupled with full vinifications in 500-litre temperature-controlled tuns, on the most representative lots of the estate. Malolactic fermentation and ageing are carried out in barrels.
