Association of two entrepreneurial families passionate about wine, Jolivet and Oddo, around the Le Piton project within the most beautiful appellation for Sauvignon Blanc in the world – Sancerre.

This Estate has the particularity of owning its vines in a single commune, that of Sancerre, which is the genesis of the appellation with its oldest terroirs, known as Silex.

The 8 hectares of Sauvignon Blanc, planted on these historic plots around the Piton de Sancerre, were organically cultivated from the first year of the recovery. The work and the nutrition of the soil are their belief and their ambition. In addition, the Domaine du Piton has also obtained the recognition of High Environmental Value Level 3. Vines over 30 years old.

At the harvest, each of the grapes is sorted and selected, as in the cellar during reception. The gravity cellar makes it possible to produce wines with the greatest respect for the grapes. Slow and light pressing to optimize the purity of the fruit. Vinification of the flint and clay-limestone terroirs separately with native yeasts, then the wines are aged on fine lees for 9 months in order to bring all the complexity of our terroirs and create balance.

Subtle nose with the scent of ripe lemon, notes of Jasmine flowers and iodine. The attack is frank and vibrant, greedy on white-fleshed fruits and a smoky finish reminiscent of our Silex.
