The history of Saint-Georges dates back to the Gallo-Roman period. The extent of this area was a thousand acres, or about 263 ha, which corresponds approximately to the extent of the parish of Saint-Georges. Château Saint-Georges and its estate were sold by Henri IV on October 27, 1602 to Jean Barbot for the sum of 1500 pounds, the purchaser also obtaining the title of Baron. It was the Sieur de Bouchereau, new and last Baron of Saint-Georges who had the architect Victor Louis rebuilt a high figure in the neo-classical style (Grand Théâtre de Bordeaux; Place du Palais Royal in Paris) in 1772, the old feudal castle of which we will nevertheless keep the four corner towers. If the revolution spared the Château Saint-Georges, this jewel of 18th century architecture, the phylloxera having ruined the vines, the exploitation of the domain perished. It passed through several hands until November 19, 1891, when it was acquired by Pétrus Desbois who reconstituted the vineyards by grafting the French plants onto American roots.
