This Blossoming Auld Sherried is the epitome of Michel Couvreur Whiskies. It’s a replica of the great malts of the Victorian era. It develops an unforgettable roundness and power, a freshness that only barley holds the secret to. It has the style of a Grand Bas Armagnac. Reduced to 45% alcohol with Scottish water.
Michel Couvreur was originally a Burgundy wine producer and merchant. He purchased the Molet cellars in Bouze-lès-Beaune in 1956, then worked in Scotland where he learned whisky making. This independent Belgian bottler specializes in whiskies aged mainly in sherry and port casks. Importantly, he never specifies the origin of the distillery on the labels. Michel Couvreur believes that “90% of the quality of a whisky comes from the cask, and only 10% from the distillation process.” He passed away on August 17, 2013 at the age of 85. His daughter and her husband took over the business, assisted by the cellar master. All Michel Couvreur whiskies are aged in their cellar in Bouze-lès-Beaune. It is an exceptional cellar, with 150 meters of galleries dug into the heart of the Burgundy rock. It offers perfect conditions for the maturation of whisky (humidity, silence, calm and depth). Michel Couvreur whiskies are the meticulous work of assembly, each barrel is individually monitored and each bottle requires special care (corking, waxing and labeling by hand). These are whiskies of very high quality with a lot of roundness and balance. Michel Couvreur has a revolutionary and very personal vision of whisky: more than the terroir or the work of the distiller, the grain spirit becomes whisky by its aging in wooden barrels. He will compare it to a fertilization, to which he will devote his work and research from 1978…in Burgundy and in France.
