Here’s a truly original spirit: Bourgeon de Sapin by Metté, a liqueur distilled from spring fir buds. It’s a real walk in the forest in a bottle—fresh and lemony on the nose, a burst of pine and menthol on the palate, with a long, invigorating finish. Serve around 13°C in a tulip glass, as a neat digestif or as a refined touch on a lemon sorbet.

This is Distillerie Metté, an Alsatian artisanal institution born in the 1960s in Ribeauvillé. Today, it is a family adventure led by Timothée Traber who perpetuates the legacy of Jean-Paul Metté. With nearly 90 eaux-de-vie and more than 30 liqueurs, this house combines simplicity and inventiveness: from the classic Mirabelle plum or Williams pear to the most surprising creations—truffle, Sichuan pepper, flowers… Each bottle embodies exceptional expertise, blending premium fruits, double distillation in copper vats, and long aging in the rhythm of the Alsatian climate.
