Like goldsmiths, the winegrowers of Cassis cultivate this vineyard, like a rare pearl, nestled between sea and cliff. These estates, the majority of which have been in the hands of the same families for several generations, have worked tirelessly to preserve their vineyards despite the land pressure exerted on the Bay of Cassis. Always concerned about the protection of their appellation and the preservation of its environment, the winegrowers of Cassis are moving towards organic farming of their vineyards.
Their practices are also part of a sustainable development approach. In 2012, the Cassis vineyard was integrated into the territory of the Calanques National Park. The Cassis appellation is thus the only one in A HARMONIOUS TRIO
GRENACHE, CINSAULT, MOURVÈDRE, ARE THE THREE VARIETALS
LIGHTHOUSES AT THE ORIGIN OF ROSÉ AND RED WINES.
Grenache Noir, resistant to drought and violent winds, has found a chosen land in the vineyards of Cassis. Vinified in rosé, it brings fat and roundness as well as fruity aromas and a light color. Cinsault, also resistant to drought, likes the least fertile plots. Its assets, suppleness, finesse and pleasant floral and fruity aromas. Vinified in rosé it gives a pastel color to the wines. Mourvèdre was widely grown in Cassis before phylloxera. Vinified in rosé, it brings freshness and lively aromas.
