A rare wine, best enjoyed on its own as an aperitif. The grapes are harvested by hand and pressed very slowly, to respect the fruit. Juices from the last press are not retained. Aged in barrel for 12 months. The “Kimmeridgian” limestone soil contains billions of tiny marine fossils in a whitish cement that must have been the ocean floor… hundreds of millions of years ago. This marine origin gives a unique flavour to Chablis wines.
